Jonathan Forester has posted a recipe at Slashfood, using tasty, low fat, skinless, boneless chicken thighs and a whole bunch of delicious veggies. This is ideal for the season and, ideal for single eaters, as he says, “I make big batches and freeze it in one or two portion containers for easy use during the week.”
