Here’s something just as special in taste for your weekend delight, but, like most one-pot meals; roasts, stews, casseroles, etc., there is really no need to cut down the ingredients to make only one portion, as it will keep, saving time and effort and providing you with dinners for the rest of the week, or to freeze for later dates.
The other great thing about them too, is that apart from preparing and chopping a few ingredients, these dishes mostly cook themselves, while you read the Sunday paper, or snooze and delight in the wafting aroma ….
