Admittedly this recipe serves four, so you’ll probably need to freeze leftovers. (Rice keeps in the ‘fridge for a day or two, but deteriorates rather badly after that.) But reading Yumsugar’s intro, “This is a fresh, health-friendly one-pot meal with minimal effort. This is a great meal to make on nights when you don’t have time to run to the grocery store …“, made me think, oh yes, that’s for me! Hope you agree.
