Another adaptable recipe from Yumsugar, are these Ham, Spinach, and Sun-Dried Tomato Calzones. To make this suitable for one, you could prepare a batch of filling and freeze in individual portions. Defrost, assemble with the appropriate share of pizza crust and bake, on the day of eating.
