Ruth Daniels of Once Upon A Feast has a link list of Soups & Stews - by no means comprehensive, but certainly creative - that looks worthy of further investigation in the search for suitable recipes for meals that can be cooked “in bulk” (for four or more) and stored for later eating.
Ruth’s posts on Presto Pasta Night deserve a look too. Not all dishes would reduce easily to a single portion, but many probably would and all are illustrated for quick inspiration!
